Chef Max Stiegl enjoys a cult following at Gut Purbach for his authentic cuisine sourced from the Leithaberg forest and Lake Neusiedl in Burgenland. Viennese gourmets love to escape to the little city of
Purbach, Burgenland nestled at the foot of the Leitha Mountains just 40 miles south of Vienna.
One enters through a large iron gate to a courtyard paved with limestone gravel. Simple furnishings and an abundance of potted herbs highlight the natural beauty of the structure. Inside, striking white walls and larch floors are adorned with modern paintings and sculptures. Chef Max Stiegl sources game from the mountain forests, vegetables, fruits and herbs from surrounding fields, and fish from Lake Neusiedl. Gut Purbach is also situated at the heart of the
wine appellation which is famed for its “Leithaberg rot”, a highly mineral red wine made from the spicy Blaufränkisch grape.
The wild forest berry aroma, juicy acid and silky tannins of this wine make it perfect to pair with Max’s famous roasted roebuck with Pannonian peppers and polenta.
