Salzburger Nockerl Dessert

Fluffy, delicious and made only from eggs and sugar this dessert not only has a long history but also a huge fanbase.

Looking for a special dessert that you will usually only find in Salzburg? How about one that is hard to pronounce by non-German speakers, but will be remembered for a long time as a truly wonderful gastronomic experience? Then you should try the Salzburger Nockerln, a sweet soufflé that is always freshly prepared and served warm with powdered sugar. It is ideal as dessert, but be sure to leave enough room, the portions are usually quite large.

Salzburger Nockerl were supposedly invented in the early 17th century by the concubine of Salzburg’s Prince Archbishop Wolf Dietrich. Do the little mounds look like the 3 hills surrounding Salzburg and the powdered sugar like a layer of snow? Make sure to let the waiter know you plan to have it for dessert when taking your order because it takes about ½ hour to make!
