Old and new, traditional and modern – barely any other region places such emphasis on the interplay of contrasts in architecture as the Bregenzerwald forest region. In Hotel Schwanen in Bizau they go one step further – here the gourmet kitchen prepares medieval recipes.
Whether it’s wild garlic-topped goat cheese tarts, saddle of lamb with wild potatoes and Jerusalem artichokes or dandelion mousse on a raspberry coulis: at the Hotel Schwanen, located right on Bizau’s Kirchplatz, the cooking is not only extremely creative but also extremely nutritious. You can enjoy not only traditional Austrian delicacies but also dishes based upon recipes passed down from the herbalist Hildegard von Bingen. The excellent gourmet food, awarded 14 points by the Gault Milau, is served in the old lounge, in the fashionably designed restaurant or idyllic hotel garden. If you don’t wish to leave afterwards, accommodation is available in one of the hotel’s newly designed rooms. Here too, nature and regional ties are of special importance. Guests will be impressed by the large window front with its views across the nearby mountain scenery, but above all by the furnishing and architectural materials which are drawn exclusively from local oaks, stone pines and silver fir timbers. The sauna is the design of architect Hermann Kaufmann and makes for a unique wellness oasis. For the especially health conscious, special fasting and detox weeks are offered on certain dates. And if you only have the chance to dine here once, reserving the ‘Wild-Woman-Menu’ is heartily recommended – prepare to be surprised.
