Ingredients: (four servings)

  • 4 finger-thick cut veal fillets
  • 2 eggs
  • clarified butter and/or vegetable oil
  • coarse-ground flour
  • bread-crumbs (non flavored)
  • salt & pepper
  • slices of lemon, to garnish

How to prepare the Schnitzel:

  1. pound the veal well on both sides
  2. After pounding flat dip both sides into the flour
  3. Blend the eggs with one tbsp. oil and some salt and pepper and pull the fillets through this mixture
  4. cover the fillets with bread-crumbs, which should cover all meat, but do not press the bread-crumbs on to the meat with your fingers or they will become hard when frying
  5. Fry in a small amount of oil on medium heat for about 5 minutes on each side or until they are golden brown
