    Ravioli with Stinging Nettle and Cream Cheese Filling

    Make these unusual ravioli very quickly and easily on your own. Stinging nettles are a traditional ingredient in Austrian cuisine.

    In the Salzburger Pinzgau region, wonderful recipes are created from natural ingredients. For example, did you know that stinging nettles can be used as an amazing filling for pasta?

    How to make it:

    Step 1:

    From the dough ingredients (flour, salt, turmeric, and hot water) knead a solid pasta dough.

    Step 2:

    Blanch the nettle leaves, finely chop the wild garlic, stir in the cream cheese, and season with salt and pepper.

    Step 3:

    Divide and roll out the dough. Spread the stuffing on a piece with the soup spoon (about 3 cm / 1 in distance). Spread the gaps with the beaten egg yolk and beat the second half of dough over it.

    Step 4:

    Cut out the ravioli with a cup or glass, press on the edges with your fingers. Put into lightly simmering salted water until they float.

    Serve ravioli with lukewarm herbal vinaigrette and Parmesan cheese.
