    Upper Austrian Roast Beef in Cider

    Roast beef marinaded in cider, a favourite of the Upper Austrian "Most" cider region.

    Upper Austria is (alongside the Lower Austria "Mostviertel") the home of "Most", an alcoholic apple or pear drink similar to cider.

    How to make it:

    Step 1:

    For the marinade: Boil all the ingredients for around half an hour.

    Step 2:

    For the roast: Allow the marinade to cool before placing the meat in it and marinading it for around 48 hours, ensuring that all the meat is covered. Remove the meat from the marinade and dry it thoroughly before brushing it with the mustard and briefly sauté it in hot oil.

    Step 3:

    Take the root vegetables from the marinade and fry them along with the flour. Pour the marinade over it to and stew until ready. Once cooked, remove the meat from the sauce and strain the sauce. Cook well again, this time with halved prunes, walnuts, and cream

    Serve alongside noodles or dumplings and red cabbage.
