How to make it:
Melt the sugar slowly and caramelize it until it turns from golden brown to copper. Do not stir during the process.
Add butter and whipping cream and stir to create a homogeneous texture. Add salt and simmer for a few minutes.
Cut 4 pears in half at the upper third and core them with a spoon (do not throw away the fruit pulp!!)
Chop marzipan, cranberries and almonds and mix with 2 tablespoons of the fruit pulp. Fill pears with the marzipan mixture.
Place a piece of butter on the pear and roast in the oven at 180 degrees (top and bottom heat) for 20 minutes.
