    The ice cream maker from Lockenhaus

    From stonemason to ice cream expert: In 2013, Joachim Kitzwögerer, a career changer, began to revolutionize the ice cream business from the 2,000-strong community of Lockenhaus, and has been conquering customers and guests with his creations ever since.

    At the age of 19, Joachim Kitzwögerer began his apprenticeship as a stonemason and stone sculptor in Lockenhaus, Burgenland. He has lived in the community of 2,000 souls since his birth. In 2013, he additionally began to buy and renovate houses in his hometown in order to subsequently rent them out. The tranquil village of Lockenhaus is best known for its medieval flair around the castle, which is steeped in history. The local Café Heiling, which has been serving ice cream made to its own recipe since 1927, also has a long history. And since 2013, a very special one, as locals and visitors from the surrounding area agree.

    • A café as significant as St. Stephen's Cathedral

      When the traditional Lockenhaus coffeehouse was finally put up for sale, Kitzwögerer took what he considered an absurd step: "I called on a whim and asked for the selling price. 'It's not going to happen anyway,' I thought to myself." When he actually got a commitment, he was amazed. "It's like buying St. Stephen's Cathedral in Vienna," the 41-year-old jokes.

      But his daughter, who was 18 at the time, had ambitious plans and asked her father to take over the coffeehouse on the ground floor. Shortly after taking over, however, her plans changed again: "My daughter really wanted to have the café. After two months she said, 'I was delighted, I'm out of here.' And I've had an ice cream business ever since."

    A fact, however, in which Kitzwögerer recognized a great opportunity. He is known in the region, not without reason, for his ideas and his go-getter attitude, and began to experiment with the old recipes of the Heiling family. "The traditional recipe for the ice cream has been around since 1927, and the previous owner of the café passed on her expertise, the recipe, and the name to me. On weekends, the stonemason, who was still working full time, has been in the ice cream parlour himself to take on board the feedback from customers and implement it straight away: "When I realised that people were travelling over 50 kilometres to Lockenhaus for my ice cream, I knew that I was doing everything right."

    Joachim Kitzwögerer sees his success primarily in the quality and innovation of his products. "It is important to me that we remain regional. It starts with the milk, which we buy in the Bucklige Welt, the raspberries come from southern Burgenland, the strawberries from Wiesen, the plums from Raiding." The father of two children attaches great importance to the selection of his suppliers and sustainability is also a priority at Heiling Eis - the branches, for example, are almost plastic-free.

    "I approach our guests openly, asking about their wishes or what varieties they would like to see. Often they also come up to us and suggest varieties. That motivates."

    Not only the classic varieties such as strawberry, vanilla or chocolate are part of the Heiling ice cream range, but also unusual creations such as grandma's apple strudel or the popular mini ice cream dumplings. The mini ice cream dumplings are his reaction to winter unemployment: "In summer, we are busy making ice cream and selling it - I was looking for something that my employees could also produce in winter so that I could keep them busy during the cold winter months."

    Due to the great demand, the next big step for him was obvious: "I can't just do one thing, I'm not the type for that. So at some point it was time to look for new locations." A very challenging time for him, as it soon turned out. He started looking for suitable business premises in Vienna, but as an "ice cream maker" from Burgenland he was not taken seriously by his competitors.
    He finally opened his first branch on Meidlinger Hauptstraße and later one on Rotenturmstraße. Since then he has already opened 21 locations with franchise partners, the last one opposite the Vienna State Opera. "I now get three requests a week to open a branch in a particular location," says Kitzwögerer, who is delighted with the response.

    "Sympathy and passion are most important to me when choosing partners and producers."

    Tinkering at home

    The "ice cream maker" gets his inspiration at home on the terrace with a good glass of wine. There, he has already tinkered with countless ideas, for example a vegan, sugar-free variant: "This gave me a lot of sleepless nights, but I've done it". As far as the future is concerned, Joachim Kitzwögerer is keeping a low profile: "I'm currently developing an ice cream that doesn't exist yet. A very exciting project. I would like to concentrate on that and therefore hand the business back over to my daughter."

    At home in Lockenhaus, Kitzwögerer not only has the best ideas, but also gets a balance to his busy ice cream making existence. "Lockenhaus is like little Italy. Everyone knows everyone, you have pure nature. A small sleepy place, I like that. There are many things worth seeing, the thermal baths in the region or the beautiful Lockenhaus Castle." His personal place of well-being is his own home. He lives secluded and enjoys the peace and quiet, also likes to spend time with his alpacas: "I don't need a kick in my free time, my whole life is a kick."
