How to make them:
For the dough:
Using a hand mixer, whisk the 3 egg whites until stiff whilst slowly adding confectioner's sugar. Add ground almonds, a pinch of salt, and cinnamon, and mix into a dough. Prove in the fridge for 45 minutes.
Roll the dough to a thickness of about 0.5 cm / 0.2 inch on a worktop sprinkled with confectioner's sugar. Also sprinkle the rolling pin with confectioner's sugar from time to time, so the dough does not stick to it.
Take a star-shaped biscuit cutter and cut out as many stars as possible (you can also use confectioner's sugar on the biscuit cutter from time to time to avoid the dough sticking). Put the biscuits on a baking tray lined with baking paper.
For the icing:
Using a hand mixer, whisk the single egg white with confectioner's sugar until stiff, then carefully stir in the lemon juice until the mixture is creamy. When finished, take a teaspoon and apply this icing onto the centre of your star-shaped biscuits. Spread the icing onto each point of the stars using a toothpick.
Pre-heat your oven to 100° C / 212° F (fan). Bake the biscuits for 15 - 20 minutes.
Tip: Before storing the biscuits in a metal tin, leave them out for one day to cool down and keep the icing from cracking.
