Modern Viennese Cuisine – experience the extraordinary!

There is no city of more than a million inhabitants in Europe after which a cuisine - "Viennese cuisine" - is named and where even wine is grown. Vienna also produces products that are particularly sought-after in Viennese gastronomy. It is, therefore, not surprising that Vienna attracts the top creative chefs.

Farm-to-table a culinary trend that is also making its way into the metropolis of Vienna. The vegetables come directly from the patch to the plate. Modern vegetable cuisine is regional, seasonal and sustainable. When creative chefs are at work, they coax the pure and genuine taste out of every single vegetable.

One culinary artist who succeeds exceptionally well is star chef Paul Ivic.

    Vegetarian gourmet cuisine at TIAN

    Star chef Paul Ivic

The restaurant TIAN in Vienna shows the diversity of vegetarian cuisine at the highest level. The menu reads like a walk through the vegetable garden. Michelin-starred chef Paul Ivic uses fair and organic products, including almost forgotten vegetables, fruits and grains, to create refined dishes. It is important to Ivic and his team to throw away as little as possible. This leads to the creation of new ideas, ingredients and taste sensations again and again. For its great cuisine, TIAN was awarded one star by the Guide Michelin. This makes it one of the best vegetarian restaurants in the world.

"My team honours the work of the farmer*s by always striving to process the entire plant - from root to leaf - and not throwing anything away."

Luxury for the palate - Vienna also has that to offer. Of course, Vienna is known for its Wiener Schnitzel and Kaiserschmarren, for its quaint inns and Beisln, for its traditional coffee houses and cozy Heurigen. But Vienna is also home to world-class gourmet restaurants. The top chefs show courage and create innovative Viennese cuisine.

The Steirereck restaurant is one of the best restaurants in Vienna: two Michelin stars, five Gault Millau toques and 12th place in the "World's 50 Best Restaurants". Heinz Reitbauer presents contemporary Austrian cuisine at the highest level at Steirereck im Stadtpark - in Vienna's oldest park in the middle of the city.

Stylish: the food, the restaurant and the guest garden

    Scene pub Labstelle

At the Labstelle near St. Stephen's Cathedral, everything is just right - from the cuisine to the design. Many products come from producers in Vienna: the figs from Feigenhof am Himmelreich, the fish and vegetables from blün in Vienna's 22nd district, and the Wiener Gemischter Satz DAC from the Wieninger winery. The dishes present themselves as impressive works of art on colour-coordinated plates and bowls.

In the courtyard, the hanging gardens make visitors feel like they are in a green oasis in the middle of the city center. In the restaurant, guests take their seats on "Y-Chairs," a design classic by Danish architect Hans J. Wegner. Together with polished concrete, black steel and leached wood, the chairs blend harmoniously into the overall look of the restaurant.

    Viennese wine and Heurigen culture

At the Wiener Heurigen (wine tavern), visitors appreciate the good wines produced by 700 hectares of Viennese vineyards (one third of which are organic) and 140 winegrowers. Dozens of these romantic, cosy wine taverns can be found in the wine villages and vineyards on the outskirts of the city: in Grinzing, Nussdorf and Stammersdorf. By the way, Vienna's Heurigen culture is a UNESCO intangible cultural heritage site.

Even top restaurants have long been convinced by Riesling and Pinot Blanc from Vienna. And of the Wiener Gemischter Satz DAC. In this specialty, the grapes of at least three white wine varieties are planted and pressed together. White wine is cultivated on about 80 percent of Vienna's wine-growing area, and Wiener Gemischter Satz on the remaining vineyard area. Vienna is the only metropolis in the world with significant viticulture within the city limits.
